Rich Lemon Chicken (0 syns)

This is a gorgeous lemon chicken recipe.  Out of this world.   And best served with either pasta, cooked macaroni or simply just veg as in this picture.  The veg in this picture are...

1. Carrots - roasted in carraway seeds and fresh coriander
2. Asparagus - put in boiling water for 60 secs then drain and immerse in cold water
3. Sugar Snap Pear & 4. cubed courgettes  - blanched in boiling water for 30 secs then drained and immersed in cold water

Ingredients

  • 1 kg chicken thighs cut into chunks
  • 1 onion chopped
  • 1.5 lemons zest and juice
  • 1 chicken stock gel
  • 300 ml water
  • 2 sprigs fresh thyme or 0.5 tsp dried
  • 2 egg yolks
  • 0.5 tsp salt
  • 1.5 tsp black pepper
  • 1 small bunch chives

Method

  1. Fry off chicken until lightly browned.
  2. Add onion and fry until softened (about 5 mins)
  3. Add lemon zest, lemon juice, water, chicken stock gel, thyme, salt and pepper.
  4. Bring to boil. Reduce heat. Cover with lid. Simmer for 30 mins. Stir periodically.
  5. Beat egg yolks in a bowl.
  6. Remove chicken from the liquid.
  7. Take the liquid off the heat. Allow to cool a little. SLOWLY, bit by bit, stir in egg yolks. Return to low heat. Stir constantly until thickens.
  8. Add the chicken back in. Add chives too.
  9. Serve with vegetables, pasta or macaroni.

Recipe Notes

Make sure the liquid mixture is not too hot when adding the beaten yolks otherwise they will curdle into scrambled eggs!!!  Go slow.
