Ingredients
1kgchicken thighscut into chunks
1onion chopped
1.5lemonszest and juice
1chicken stock gel
300mlwater
2sprigsfresh thymeor 0.5 tsp dried
2egg yolks
0.5tspsalt
1.5tspblack pepper
1small bunchchives
Method
Fry off chicken until lightly browned.
Add onion and fry until softened (about 5 mins)
Add lemon zest, lemon juice, water, chicken stock gel, thyme, salt and pepper.
Bring to boil. Reduce heat. Cover with lid. Simmer for 30 mins. Stir periodically.
Beat egg yolks in a bowl.
Remove chicken from the liquid.
Take the liquid off the heat. Allow to cool a little. SLOWLY, bit by bit, stir in egg yolks. Return to low heat. Stir constantly until thickens.
Add the chicken back in. Add chives too.
Serve with vegetables, pasta or macaroni.
Recipe Notes
Make sure the liquid mixture is not too hot when adding the beaten yolks otherwise they will curdle into scrambled eggs!!! Go slow.
