Indian Omelette (0 syns)
This is soooo delicious. And the yoghurt and cherry tomatoes go with it beautifully. All Indians in Britain eat and love this.

Ingredients
- 6 eggs
- 3 spring onions - finely sliced
- handful fresh coriander
- quarter to half a teaspoon of chilli powder
- half teaspoon cumin
- one teaspoon garam masala
- half teaspoon salt
- Total 0% Greek yoghurt
- Cherry tomatoes get the sweet ones
Method

Beat the eggs with spring onion and get a lot of air into them,

Add the coriander, chilli and salt.

In a pan, spray with Fry light. Add garam masala and cumin and gently heat (do no toast or burn) - light golden colour NOT dark brown.

Then add the beaten egg. Stir occasionally to get large scrambled eggs effect.

Serve with Total 0% Greek yoghurt and sweet cherry tomatoes cut in half.
