Chicken Ginger Curry (4 syns)

If you think all curries are the same - think again! This dish will prove you wrong. It's not very hot (although it can be if you add more chilli than the suggested amount) but it is absolutely one of the scrummiest curries that even those who are not great fans of curries will love. Sweet, gingery with a hint of spice. Note that there is no added oil or water to this dish - only 2 knobs of butter.

Ingredients

  • 500 g chicken thighs - cut into chunks
  • 3 x tomatoes 21 cherry tomatoes - even more gorgeous
  • 2 tbsp ginger grated
  • 4 garlic cloves finely chopped 1.5 cubes
  • 1 tsp salt
  • ½ tsp ground turmeric
  • ½ tsp ground black peper
  • ¼ tsp red chilli powder ½ tsp if you like it really hot
  • 2 tbsp natural low fat yogurt I prefer Arla Skyr Icelandic style yogurt mixed with honey - high in protein, low fat, and works v well.
  • 2 tbsp tomato ketchup
  • 2 tbsp butter
  • 2 green chillis - finely chopped
  • ½ tsp garam masala
  • very small handful coriander leave out if you don't like coriander
  • 4 cups boiled rice

Method

  1. Chop the chicken into bite size pieces
  2. Chop the tomatoes into little pieces (quarter if using cherry tomatoes)
  3. Put the chicken, tomatoes, ginger and garlic into a sauce pan and cook on low heat. Cover with a lid.
  4. After 10 mins, when the chicken and tomatoes have released their juices add salt, pepper, chilli and turmeric.
  5. Keep lid off and cook on low heat for about 5 mins-10 mins more. Juices should thicken up into a sauce.
  6. Now add the two tablespoons of butter. Cook 2 mins more.
  7. Add yogurt, tomato ketchup and the green chillies.
  8. Cover with lid and cook 8 mins low heat.
  9. Add garam masala, cook 1 min more (lid on).
  10. Garnish with the coriander (and with a few strips of finely cut fresh ginger if you love ginger).
  11. Serve with rice.

Recipe Notes

Please note: Frozen cubes of garlic or ginger can be found in international supermarkets and in some major English supermarket stores. One rectangular cube measures 3.5cm x 3.5cm x 1.5cm.
