This is quite a nice refreshing but filling dish. And it looks fab too.

Ingredients
4average sized salmon fillets
one lemon - zest and juice
Farfalle pastaalthough any other type is okay too
5-10sprigs of asparagus chopped 3cm pieces)
brocolli florets
150gfat free natural fromage frais
salt
pepper
Method
Put the salmon onto kitchen foil. Cut the lemon in half and squeeze one half completely over the salmon. Then season the salmon with salt and pepper and fold the foil to make it air tight. Place in oven at gas mark 200 C for 12 minutes.
Cook the farfalle according to instructions.
Then make the sauce. To the fromage frais add the lemon zest of the one lemon. Then add the juice of half a lemon. Season well with salt and pepper. Then mix together.
Put the brocolli and asparagus to boil. Do the asparagus first for 5 mins then add brocolli and boil for another 3 minutes.
Add the sauce, salmon, brocolli and aspargus to the farfalle. Mix well but gently.
Serve and enjoy.
Recipe Notes
By the way, if you leave out the vegetables and pasta, you can make a really nice salmon pate by mixing the salmon with the fromage frais based sauce.
