I love this dish. Simple to make. Takes no time at all. You can eat it dry (i.e. eat the individual chicken pieces as a snack) or serve it with rice or a salad. It can be lunch or a dinner (depending how much volume you want. I think it tastes better than even takeaway Tandoori Chicken. I’m sure you could leave chicken thighs whole and do them in this way too, without chopping them up into little pieces – but make sure the chicken is cook. But also remember not to over cook chicken because then it becomes rubbery rather than succulent. Frying time of about 10-15 minutes for this little chicken pieces is enough – but to double check, just pick one out and slice in half to see if there is any pink’ishness

Ingredients
Chicken thighsabout 8 pieces – can use four large breast pieces too – cut into small bite sized chunks. I prefer around 2-3cm big.
1onion – finely chopped
2tbspolive oilcan get away with 1 if you want to cut down the syns
1tbspminced garlic=4 cloves/1 large frozen cube
1tbspminced ginger1 large frozen cube
1tbspminced green chilli1 large frozen cube/3-4 chillis minced – use 0.75 tbsp chilli if you dont have a spicy palate.
1tbsptandoori masala
0.5tbspgaram masala
1teaspoonsaltcan taste later and add more if not enough
Method
Fry the onions in the olive oil until golden brown
Add everything else except the chicken (the garlic, ginger, green chilli, salt, garam masala and tandoori masala).
Fry for 1-2 mins.
Add the chicken pieces, and occaisionally stirring for about 10-15 mins until chicken cook through.
Serve on its own, with a salad or with rice. (I love rice and this chicken. If you prefer a slight wetter dish, add half a cup of water to the chicken before serving it from the pan).

Please note: Frozen cubes of garlic or ginger can be found in international supermarkets and in some major English supermarket stores. One rectangular cube measures 3.5cm x 3.5cm x 1.5cm.
