Ingredients
1medium sized butternut squashpeeled and the seeds removed (you can peel a butternut squash with a good potato peeler)
An equal sizeto the butternut squash of potatoes (about 3 large ones).
Pinchof ground gingeroptional
Method
Boil the butternut squash.
Boil the potatoes
Mash each. (If you’ve got a potato ricer – even better, makes perfect mash)
Mix the two mashes. Add a sprinkling of ginger (optional). Season with a little salt and pepper according to taste (0.5 tsp of each? perhaps 1 tsp salt)
