Make Perfect Rice
Different types
There’s a whole range of rice types – from the traditional indian rice to the arborio rice used in spanish paella. You can get white rice, black rice and even brown rice. The texture differs too – indian rice is typically light and fluffy; spanish paella rice is al dente and then you have the glutinous texture of chinese rice and the nuttiness of brown rice.
Each type of rice has a different method of cooking. The one I am going to concentrate on here is the Indian rice because nearly everyone loves its light and fluffy texture.








The Perfect Method

Step 1 - rice type
The rice the Indians invariably use a ‘long grain’ basmati rice’ like Tilda.
Step 2 - wash it
Washing the rice is one of the key steps. You need to get rid of that outer coat of starch on each grain of rice. If you don’t wash your rice, this starch becomes a glue that makes your rice all glutinous and clumpy.
One of the best ways to wash the rice is simply to put it in a colander with small holes and then wash it under the tap. Whilst washing, grab some rice between your fingers and rub them against each other to give them a good wash. The whole thing should only take about 5 minutes and drain thoroughly. Don’t be over zealous – otherwise you will break the rice – although this can be a nice thing too (Thai dishes often call for broken rice).


Step 3 - the right ratio
- If you’re cooking white rice, the ratio is 1.5 to 1
- If you’re cooking brown rice, the ration is 2 to 1.
In other words, for white rice, it is 1.5 (one and a half) cups of water to every 1 cup of rice. Obviously 2 for brown rice.
Step 4 - boil vs rice cooker
If using a pan, put the rice and water in and bring to the boil. Then lower the heat until it just simmers. Cook for 15-20 mins. Keep a close eye on it during the 10-15 minute stage – periodically pick out a couple of grains and see if they are to the consistency you require (careful not to burn your mouth – the grains will be hot!).
Better still, invest in a rice cooker. They only cost around £20 – so won’t break the bank. And they make PERFECT rice every time (and can keep it warm too until your main meal is ready).
