Poochi’s Potato, Rice and Peas (2 syns)

This is an easy peasy gorgeous vegetarian recipe that works well with simple plain boiled rice. Why not add more veg to make it even more healthy - finely chopped broccoli and/or carrots works well. Another one from Pooch x.

Ingredients

  • 2 tbsp oil
  • 1.5 large onion diced
  • 3 chopped tomatoes
  • 2 medium chopped green chillis seeds removed
  • 1.5 tsp salt
  • 1.5 tsp turmeric
  • 1.5 tsp garam masala
  • 2 medium potatoes. Chopped into chunks.
  • 2 cups frozen peas
  • 400 g rice uncooked

Method

  1. In 2 tablespoon of oil, fry of 1.5 diced large onions until the edges become brown. This will take around 10 minutes. Remember to but the lid on.
  2. In a blender add 3/4 can chopped tomatoes and the green chills. Blitz and add to the onion pan.
  3. Add 1.5 tsp of each of salt, turmeric and garam masala.
  4. Cook for 5 mins.
  5. Now add the chopped potatoes and 2 cups of frozen peas. Stir.
  6. Lid on, cook for 2-3 mins.
  7. Add 3-4 cups of water.
  8. Lid on, cook for 15 mins. Make sure pototes still hold there shape.
  9. Add one small handful of freshly chopped coriander.
  10. Serve with boiled rice.
