Lemon Herb Chicken Thighs (0.5 syns)

Another bbq style chicken. Not spicy at all but equally delicious

Ingredients

  • 10 chicken thighs or 20 chicken drumsticks de-skinned
  • Juice of 3 lemons
  • Grate zest of 1 unwaxed lemon
  • 2 garlic cloves
  • 3 tbsp. tomato puree
  • 1 tbsp dried mixed herbs
  • 1 tsp mustard powder English Mustard Powder
  • 2 tablespoon fat free natural yoghurt or Honey I prefer latter – but try different versions
  • Salt and freshly ground pepper

Method

  1. Chicken thighs – cut off any excess bits of fat. Add cuts to the thighs/drumsticks for the marinade to seep through.
  2. In a separate bowl, mix together lemon juice, zest, garlic, tomato puree, herbs, mustard and honey (or yoghurt).
  3. Add the chicken pieces to the mixed spice marinade and mix thoroughly.
  4. Allow to sit for 20-30 minutes or preferably overnight.
  5. Place pieces on a wire rack and stick in the oven (or halogen oven) – 180 C or 160 if fan assisted.
  6. Turn pieces after 12 mins (12 mins on each side)
