Jacket Potato with Tuna or Beans (1 syn)

A nice, light and easy to make recipe.   I've included this recipe because we forget about the simple things in life.    This  particular recipe with Tuna is gorgeous.  But equally, change it as you feel - left over chicken for instance.  If you are vegetarian - baked beans or a sweetcorn mayonnaise thing.  Season well.   Be creative.   Make it wonderful.  

And this recipe doesn't take hours to make in the oven because we're taking a short cut with the microwave which cuts it down to 10 mins!

Ingredients

  • 1 can tuna in spring water
  • 1 jacket potato
  • 1 can sweetcorn
  • Extra light mayonnaise 1 syn

For the salad

  • tomatoes
  • one iceburg lettuce
  • 1 red onion
  • balsamic vinegar

Method

  1. The quickest and best way of making the jacket potato is to first stab the potato with a fork or knife all over. Then wrap it in three kitchen paper towels. Soak the whole thing in water until it is dripping wet. Then stick it in the 800W microwave for around 10 minutes. Be careful when peeling the hot kitchen towels off.
  2. Mix half the tuna with a quarter of the canned sweetcorn and 1 level tablespoon of extra-light mayonnaise.
  3. Serve with a large mixed salad made up of tomatoes, iceburg lettuce, red onion - all lightly showered with balsamic vinegar.
