Corned Beef Quicke (2 syns per slice)
You won't believe how good this quiche tastes. And if you're a fan of corned beef, you are going to love this one. The best thing is - it takes no time at all to make!
Ingredients
- 340 g Corned Beef (1 can, lean version preferable)
- 1 Onion
- 4 eggs
- 250 g Low fat cottage cheese
- 0.5 tsp salt
- 0.5 tsp ground black pepper
- 1 tsp chopped chives (optional)
- 1 tbsp chopped coriander (optional)

Pre-heat oven to 190ºC / 375ºF / Gas 5.

Open the Corned Beef and take off any white fat. Cut the Corned Beef into slices and place onto a sheet of kitchen paper on a microwaveable plate. Microwave for about 30 seconds. This will soften the corned beef and remove any excess fat. Discard the kitchen paper full of fat.

Peel and roughly cut up the Onion

In a bowl, mix together the Corned Beef and the chopped onion. Then put into the base of flan dish and press down firmly with a spoon or fork.

Beat the eggs together and add the Cottage Cheese and mix. Season with salt and pepper. Add chopped chives and/or coriander if you like.

Pour the mixture over the Corned Beef base.

Bake for 30 mins or until golden brown.

Serve hot or cold on its own or with a salad.
