Chicken, Lamb or Beef Kebabs (1.5 syns each)

These kebabs are succulent, spicy and tasty! They are easy to make. Fry them off in a splash of oil. You can make them either as patties or as skewers. The chicken ones are less flavorsome than the beef or lamb. However, one thing you can do is to mix the chicken mince with either the mince lamb or mince beef. It gives the chicken a more deeper taste.

Ingredients

  • 500 g LEAN mince chicken lamb or beef or a combination off
  • 1 medium onion finely chopped
  • 1 tbsp chopped garlic = 1 frozen cube
  • 1 tbsp chopped ginger = 1 frozen cube
  • 1 tsp salt ¾ tsp for the salt conscious
  • 1 tsp cumin - lightly roasted then crushed with pestle and mortar
  • 1 tsp ground coriander
  • ½ tsp garam masala
  • ¼ tsp red chilli powder
  • 4 green chillis - finely chopped
  • small handful of mint - finely chopped
  • small handful of coriander - finely chopped
  • 2 slices fresh white bread ends cut off - process in food processor to make crumbs
  • 2 tbsp gram flour
  • 1 egg medium

Method

  1. Put white bread (ends cut off) with fresh coriander and mint and blitz in a food process. Set aside.
  2. Chop the onion and set aside.
  3. Mix all the ingredients together (including spices) with the minced meat. Mix thoroughly by hand.
  4. (Optional): put the mixture back in the food processor to mince it even more
  5. Make longitudinal or round patties and fry them off in a pan with just a touch of oil or fry light.
  6. By the way, smoking the kebabs gives even more flavour. Burn a piece of coal til it is red hot. Put the kebabs in a pot with a lid. Put a sieve into the middle of the pot and drop the coal into it. Now poor cooking oil on the coal from above and immediately close the lid. Exercise care though to not catch fire!

Recipe Notes

Please note: Frozen cubes of garlic or ginger can be found in international supermarkets and in some major English supermarket stores. One rectangular cube measures 3.5cm x 3.5cm x 1.5cm.
