Chicken Cacciatore (1 syns)

This gorgeous Italian dish will make you wanting to make it again and again. This is an amazing dish and works particularly well with potato mash (mash potato plus milk or even something like Smash).

Ingredients

  • 12 pieces of chicken thighs - skin removed.
  • Salt and pepper to season
  • 10-12 rashers of bacon remove any large bits of fat
  • 1 onion finely chopped
  • 2 celery sticks roughly chopped
  • 1 frozen cube of garlic or 4 cloves
  • 300 g button mushrooms quartered or halved.
  • 1 red pepper - deseeded and sliced
  • 1 green pepper - deseeded and sliced
  • 150 ml chicken stock
  • 2 bay leaves
  • 2 x 400g cherry tomatoes
  • Handful of parsley
  • Potatoes - to serve with this dish - boiled chipped or mashed.

Method

  1. Use either a deep large frying pan or deep pan for this recipe.
  2. Add Fry Light to the pan and brown off the chicken pieces (5 mins or so).
  3. Add a good measure of salt and pepper to season the chicken.
  4. In another pan, fry off the bacon, add onion, celery, garlic, mushrooms and the peppers. Cook until the onions soften.
  5. Then add the chicken stock and cook for 5 mins more.
  6. Transfer to the chicken thighs containing pan.
  7. Add bay leaves and tomatoes to the chicken pan (with juice)
  8. Bring to the boil and then reduce the heat. Then simmer for 30 mins, stirring every now and then.
  9. Taste and season to your preference.
  10. Add a handful of parsley.
  11. Serve with potato chips or mash.
