OVEN BAKED PASANDA MILD CURRY (3 syns)

Pasanda is a mild, slightly sweet and creamy curry from india , this version is a single pot dish. works well with fresh boiled rice or a green veg mix.  There are 3 syns per portion.

Ingredients

  • 500 grams chicken thighs diced
  • 1 tsp mild curry powder
  • 1 tsp ground corriander
  • 0.5 tsp ground cumin
  • 1 tsp caster sugar
  • 2 tbsp ground almonds
  • 120 grams red onion thinly sliced
  • 250 ml chicken stock 1 chicken stock pot dissolved in boiling water
  • 2 tbsp low fat cream cheese

Method

  1. Preheat oven to 200C (fan 180C)

  2. Measure out and mix the spices, sugar and ground almonds in a bowl large enough for the diced chicken.

  3. Rub the chicken with the spice mix and set aside.

  4. Thinly slice a red onion and scatter over the bottom of a shallow oven proof dish.

  5. Add the chicken to the oven proof dish.

  6. Pour over the stock and cook for 40 mins.

  7. Remove from the oven, allow to cool down for 5 mins, then carefully add the cream cheese, gently stir until cream cheese is mixed in. Careful - if dish too hot the low fat cheese might split.

  8. Return the dish to the oven. Cook for a further 5 mins.

  9. Remove from oven and allow to cool a little before serving. Serve with cooked rice or green vegetables.
