Chinese Pork/Chicken Mince with Lettuce Wraps (0 syns)

This pork/chicken mince is full of oriental flavour. If you wrap it in a lettuce leaf and add a few drops of Sweet Chilli Sauce – you will be in heaven! Little Gem lettuce works really well with this, but iceberg lettuce does a good job too.

Ingredients

  • 500 g lean/extra lean minced pork or minced chicken
  • 2 tbsp lemon grass – finely chopped
  • 5 cm piece ginger – finely chopped 2 large frozen cubes
  • 6 garlic cloves finely chopped 2 large frozen cubes
  • 2 red chillies – deseeded finely chopped
  • 3 tbsp finely chopped chives dry or fresh
  • 4 kaffir lime leaves
  • 6 tbsp light soy sauce
  • 6 spring onions – finely chopped
  • 1 lime – the juice only
  • 1 tsp sweet chilli sauce
  • small handful of fresh coriander – chopped
  • small handful of fresh mint – chopped
  • salt and pepper
  • 2 Gem Lettuces or Iceberg lettuce – leaves separated to serve

Method

  1. In a food processor, blend together lemon grass, ginger, garlic, red chillies, chives and kaffir lime leaves.
  2. Add to minced chicken or pork (PS you can mince chicken yourself in a food blender too – you dont have to buy it minced. Simply buy SKINLESS and BONELESS chicken thighs – and check them for bits of remnant bone. But DON’T over blend into a paste).
  3. On a HIGH heat, stir fry meat mixture for 5 mins (until browned).
  4. Turn down heat to medium. Add sweet chilli sauce and soy sauce. Stir fry for 5 mins more.
  5. Add spring onions. Stir fry one minute.
  6. Remove from heat. Add lime juice all over the pan.
  7. Add CHOPPED herbs (coriander and mint). Mix.
  8. Season to taste with salt and pepper. Again, mix well.
  9. Spoon meat mixture into lettuce leaves and serve with extra ‘drops’ of sweet chilli sauce on top. (Sweet Chilli Sauce is 1.5syns per tablespoon).

Recipe Notes

Please note: Frozen cubes of garlic or ginger can be found in international supermarkets and in some major English supermarket stores. One rectangular cube measures 3.5cm x 3.5cm x 1.5cm.
