Poochi's Chicken Biryani (2 syns)

Ingredients

  • 1.5 tbsp cumin
  • 1 tbsp garam masala
  • 1 cube garlic
  • 1 cube ginger
  • 2 tbsp oil
  • 1 tbsp tandoori masala
  • 0.5 tbsp paprika
  • 1 tsp salt
  • 4 green medium chilli seeds removed - leave in if want it hot
  • 1 kg chicken thighs - off the bone, chopped to large bite-sized pieces
  • 1 medium onion - sliced not diced fried until edges brown
  • 2 cups rice
  • 4 cups water (i.e. 2:1 ratio with the rice.
  • 0.5 - 1 tsp salt for the rice.

Method

  1. In the 2 tablespoons of oil, fry off the following on medium-low heat.
  2. 1.5 tbsp cumin + 1 tbsp garam masala + 1 cube garlic + 1 cube ginger
  3. cook for around 3 mins
  4. Then add 1 tbsp tandoori masala + 0.5 tbsp paprika + 1tsp salt + 4 medium green chillis
  5. Fry for 2-3 mins more - taste...
  6. Add the 1kg of chopped chicken. Cook for 10-15 mins. Lid on, stir frequently.
  7. In a separate pan, fry off 1 medium onion sliced. Fry off until edges are dark brown.
  8. Add onion to the main chicken pan.
  9. Add 2 cups of rice.
  10. Add water - 1.5:1 ratio with the rice (i.e. 3 cups water).
  11. Add another 1 tsp salt to the mixture.
  12. Cover and cook for about 15-20 mins.

Recipe Notes

Please note: Frozen cubes of garlic or ginger can be found in international supermarkets and in some major English supermarket stores. One rectangular cube measures 3.5cm x 3.5cm x 1.5cm.
